Garden Salad | The Thandur

 Now, I've decided to emphasise some of the summer veggies that I enjoy eating the most throughout the warmer months by showcasing them in this Salad of Marinated Veggies that I've put together. Tomatoes, cucumbers, onions, and bell peppers are just few of the veggies that fall under this category. This category includes a wide variety of vegetables, some of the most common of which include tomatoes, cucumbers, onions, and bell peppers. These consist of cherry tomatoes, grape tomatoes, cucumbers, carrots, and bell peppers, in addition to cauliflower and larger tomatoes. Despite this, feel free to substitute any vegetables that you enjoy eating and/or already have growing in your garden in place of the ones I've chosen to include in this post. I've simply included the ones that I thought would be most relevant to the topic at hand. I have only included the ones that I believed would be most pertinent to the current topic that we are discussing Delicious Indian Foods. I've only given you a few pointers to get you started here. Incorporating raw veggies into this simple recipe, such as zucchini, summer squash, broccoli, sweet onion, celery, and/or maize, would be of tremendous benefit to the dish as a whole. Other raw vegetables that might work well include maize. As a consequence of this, the dish's quality as a whole would be elevated as a direct result of this modification.

After you have finished chopping the summer vegetables and putting away the bowl, obtain a large bowl, into which you will put them, and then put the bowl away. This is the first step. Remember that this is a very large salad, so make sure that the total amount matches approximately 10 cups. As I have mentioned in the past, the variety is entirely up to you as long as the total amount matches.

This recipe calls for two cups of cauliflower florets, which is roughly equivalent to half of a medium-sized head of cauliflower, two cups of carrots, which is roughly equivalent to four medium-sized carrots, and two cups of cherry tomatoes (a 10oz package.)

In addition, in order to stop the dressing from becoming too watery, I removed the seeds from one cucumber before cutting it. This was done before the cucumber was chopped. If you don't feel like bothering to scrape the seeds off of a standard cucumber, you might try using an English cucumber instead of a regular cucumber. On top of it, I diced up a single red bell pepper. I went with yellow since I think it's a pretty colour, but you may choose anything you want to if you want to!

The final step is to drizzle on the vinaigrette, which is made up of one half cup of extra virgin olive oil, one half cup of red wine vinegar, two tablespoons of minced shallots, four teaspoons of Dijon mustard, two teaspoons of Italian seasoning, two garlic cloves that have been pressed or minced, and salt and pepper that have been mixed together in a bowl or shaken together in a jar. The ingredients should be drizzled over the salad. It is recommended that the vinaigrette be drizzled over the salad. Following the addition of three quarters of the vinaigrette to the veggies and subsequent mixing, the vegetables are ready to be served. Keep the bowl in the refrigerator and let the vegetables marinade for at least four hours and up to a full day to bring out their full flavour (it just gets better as it sits.)

Toss with the remaining vinaigrette, then season with salt and pepper right before serving, and you've got yourself a simple side dish that is ideal for celebrating the Fourth of July or really ANY event that takes place throughout the summer! Ingredients:

  • ¼ cup pistachios

  • 1/2 of a clove of garlic, grated very finely

  • 3 tablespoons of freshly squeezed lemon juice 1/4 teaspoon of crushed red pepper flakes

  • 4 teaspoon olive oil

  • 1 ½ cups carrots, julienned

  • a half a cup's worth of finely chopped fresh coriander leaves

  • Instructions:


  • Use a small, dry skillet and roast the coriander over medium heat, moving it around regularly until the aroma is released. This will char the coriander and give it a smoky flavour. After it has cooled, you can proceed to chop it very roughly.

  • Lemon juice, red pepper flakes, and ground coriander should be mixed together in a bowl. After that, incorporate the oil by stirring it in. After you've adjusted the seasoning to your liking using salt, set it aside.

  • After adding carrots, give everything a good toss and then set it aside for ten to twenty minutes.

  • Add some chopped cilantro on top, and then dig in!

  • Exchanges per serving: 1 Vegetables, 2 Fats

  • 6 cups of fresh greens, any combination you like best.

  • 1 head of radicchio, sliced as thinly as possible 12 of a large lemon, with the zest removed and the juice squeezed out.

  • 4 teaspoons olive oil

  • To your liking, salt and pepper.



Instructions:

In a large bowl, toss the greens with the sliced radicchio and the zest from the lemon.

In a bowl or liquid measuring cup, add the lemon juice and olive oil, then whisk to blend the two ingredients.
