A Sabich Sandwich - Recipe for an Eggplant Sandwich
One of the best sandwiches in Israeli Jewish food is the sabich. Sabich is an exceptionally tasty sandwich made from moist slices of fried eggplant, boiled eggs, a creamy layer of hummus, crisp Israeli salad, and tahini and Amba sauce.
Even though falafel is a common Middle Eastern sandwich, my favourite is the iconic Tel Aviv snack called sabich. The doughy chickpea balls known as falafel in pita are not my least favourite food, but if I had to choose between the two, I would choose Sabich.
There is a purpose behind it! Sabich is a medley of flavours and textures. A pita pocket containing the creamy hummus, lettuce bits, and tangy Amba sauce together with mushy eggplant and eggs. Already salivating? I suppose I will always be smitten with this because I am.
No matter where in the globe you are from, the rich flavours of Sabich will always taste like something you've had before. If I had to sum up Sabich in one word, "happy" would be the word I would use.
The name of this sandwich, "Sabich," derives from the Arabic word for morning. This is a common breakfast sandwich for Jews in Iraq. It is a hybrid Israeli-Iraqi meal that was first served as Shabbat dinner and Indian Restaurants near me in Markham.
People frequently consume cold meals like boiled potatoes, fried eggplants, or hard boiled eggs on Shabbat days as cooking is prohibited.
It is widely consumed throughout Tel Aviv, and street sellers sell it everywhere as fast meal.

It is a pickled-mango sauce called ambá sauce. You have the option of using pre-made or homemade. Since it is not readily available here, I make my own.

How Do You Do It?
Make the eggplants.
Slice the eggplant into 12 inch thick pieces after rinsing it. You can fry them as is, but I prefer to salt them first and drain the liquids that the eggplant releases. As a result, while frying eggplant, less oil is absorbed, which reduces bitterness. Of course, if you are pressed for time or prefer oil-free eggplant, which also tastes nice, you may fry the slices of eggplant right away.
I've included a few simple tips for making the best Israeli salad, even with mediocre tomatoes. Make a salad with all the ingredients chopped.
Eggs: Boil eggs until they are peel and cut.
Pita: Once everything is ready, all that is left to do is warm the pita and cut a pocket out of one side of it.
The hummus should now be spread within, followed by an eggplant layer, tahini, and Amba sauce.
Add Israeli salad and sliced eggs after which additional tahini and Amba sauce should be added.
Your Sabich is all set!
Variations
Every bite of this interesting sandwich alternates between the sweetness of fried egg plant and the tanginess of amba sauce. The best thing about this recipe is that you may change the filling to suit your preferences.
Any salads, roasted peppers, parsley, hummus, or any specific seasoning or herb of your preference are all acceptable additions.
The classic version is sliced hardboiled eggs, but you may also try it with soft boiled or fried eggs.
You can also use poached eggs, olives, jalapenos, and other flavorful sauces.

Eggplant Sandwich Bread ingredients: Sandwiches with eggplant can be made with a number of breads. Sourdough and Brioche are always my first two choices. But this also goes well with Ciabatta or Panini bread. Use sandwich bread if none of these are available, but you MUST cook it yourself.
I've used long eggplants, but if you can find one, choose a plump round one and chop it into roundels.
Feta and cream cheeses, respectively.
Use pre-made pesto or buy basil pesto if you like.
Vegetables: I used tomato slices. Use finely sliced onions if you enjoy them.
Basil, black sesame seeds, white sesame seeds, sea salt, and chilli flakes are the toppings.
Making it:
A Step-by-Step Guide
Roundels of tomatoes should be cut. Set them apart.
Slice the eggplant into 1/4-inch-thick pieces, then keep the slices in salted water.
Warm up a normal or grill pan. Cook eggplant slices for 1-2 minutes on each side after spraying with olive oil.
Apply olive oil to the same pan, add the bread slice, and toast it on both sides.

The toasted bread should now be placed on a plate or wooden board.
Apply cream cheese first, then add a teaspoon of pesto.
Add grilled eggplant slices and tomato slices to the dish.
Sprinkle red chilli flakes and sea salt. This time, I omitted the sumac, but if you have any, you can sprinkle it.
Feta cheese crumbles and a liberal amount of sesame seeds should be added as garnish.
Then top it with chopped basil and have a tasty eggplant sandwich.
Variations
Make the sandwich as I've described here, then top it with a fried egg and some tomato slices. You have the option to add a whole or a half-fried egg. Here, I've explained how to fry an egg to perfection.
You can come up with another variant. I used sliced brioche bread for this. I've added some lettuce and used comparable stuffings. The biggest difference is that I served this eggplant and feta sandwich with another slice of toasted bread on top.
Serving recommendations:
As I demonstrated in the video, you can take pleasure in it as an open toast. I like to eat it as a sandwich and frequently cook it with brioche bread.
